Stir fry is a perfect quick meal to whip up, especially in the middle of the week when you’re pressed for time. This version is both light and nutritious and the combination of snap peas and peanuts gives it a delicious crunch. The best part is that it only takes 10 minutes to make.

Serves 4
Ingredients:
- 2 Tbsp olive oil
- 400g boneless, skinless chicken breasts, cut into slices
- 250g snap peas
- 200g de-shelled, skinless peanuts
- 1 red or green pepper, cut into slices
- 1 onion, halved and cut into slices
- 3 garlic cloves
- 1 Tbsp crushed thyme
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Crush and chop garlic and set aside
- Lightly crush peanuts and set aside
- Heat 2 tablespoons oil in large pan on a medium-to-high heat setting
- Add the chicken and cook until lightly browned
- Add the vegetables, garlic, peanuts, and thyme.
- Cook for 8-10 minutes, stirring occasionally until the chicken is golden and cooked through
- Serve with cooked brown rice or eat as is for a low-carb meal.
