Here’s a quick and easy vegetarian friendly treat from my 15 Minute Gourmet Series on YouTube. Glazed with a balsamic marinade and topped with tomato, mushrooms and basil, these tofu bites bring some fresh flavour to liven up your platters.
Ingredients:
- 400g extra-firm tofu
- 4 Tbsp olive oil
- 100ml balsamic vinegar
- 1 Tbsp soy sauce
- 1 Tbsp honey
- 2 garlic cloves
- 2 tsp Dijon mustard
- 2 tsp chopped rosemary
- 2 tsp thyme leaves
- 300g rosa tomatoes thinly sliced
- 200g fresh basil leaves
- +/- 15 small brown mushrooms
- Salt and pepper to taste
Instructions:
- Preheat oven to 160C
- Place stalkless mushrooms on tray
- Drizzle with olive oil and bake while prepping tofu.
- Wrap the block of tofu in a kitchen towel and firmly press on all sides to remove moisture.
- Slice into equal size cubes, and season with season.
- Combine balsamic, soy sauce, honey, garlic, Dijon, rosemary, thyme, black pepper, 2 Tbsp olive oil and salt in a glass measuring cup or bowl
- Stir with a whisk and set aside.
- Heat remaining oil in a large pan over medium-high.
- Once hot, add tofu and cook for 7 to 8 minutes, turning until golden and crisp.
- Reduce heat to medium-low, pour in balsamic marinade, and cook for 1 minute, stirring often until marinade begins to reduce and coat the cubes of tofu.
- Stir in sliced tomato; remove from heat.
- Serve with fresh basil leaves.
