Rocket and goats cheese pizza

Just about everybody loves pizza! It’s cheesy, crusty and flavourful, but all the extra fat and oil that comes with your standard pizza is not something to love. This rocket and goats cheese pizza is a fresh take on traditional pizza and it uses goats cheese instead of mozzarella.

Goats cheese provides a large amount of proteins and minerals to our body, contains probiotics and is also easier to digest than other cheeses. If that were not enough to add it immediately to our diet, goat cheese also contains less fat and is lower in calories, has less cholesterol and is perfect for preventing cardiovascular disease. So make the switch and try out this delicious pizza recipe. 

Ingredients

  • 20g flaked almonds, toasted
  • ½ a red onion, sliced
  • 1 tomato, sliced (or use a handful of cherry tomatoes if you prefer)
  • 200g goats cheese, sliced
  • +/- 20g fresh rocket leaves
  • 1 whole wheat pizza base (I usually use pita bread instead of pizza base but you can substitute for naan or gluten-free options if you prefer)
  • Salt and pepper to taste
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat the oven to 220°C. 
  2. In a pan, heat some olive oil and sauté the onion.
  3. On a lightly greased baking sheet place your pizza base or pita bread.
  4. Layer the base with tomato slices, onion and almond flakes.
  5. Season with salt and pepper and arrange the goat cheese slices on top.
  6. Bake for +/- 7 minutes or until the crust is golden, crisp and cooked through. 
  7. Arrange some fresh rocket leaves on top and drizzle with a dash of balsamic glaze if you choose.
  8. Slice, serve and enjoy your super tasty rocket and goats cheese pizza.
