Coconut and Veg Soup

Soup is such a great way to eat healthy low-calorie food that is jam-packed with nutrients. This Thai-inspired coconut and veg soup is filled to the brim with veggies and absolutely loaded with flavour too. Thanks to the coconut milk, this soup feels rich, smooth and creamy while the green curry paste brings a pleasant warmth to the dish.

Finish that off with a refreshing coriander and lime afterglow and you have a perfectly balanced flavour profile. This coconut and veg soup is extremely easy to make and it’s a great choice to keep you on track with a healthy diet. Serves: 4

Ingredients:

  • 400ml light coconut milk (1 tin)
  • 2 cups vegetable stock
  • 250g button mushrooms, sliced
  • 250g red peppers, sliced
  • 1 medium red onion, sliced
  • 3 large cloves of garlic, minced
  • 3/4 tin chickpeas, rinsed and drained
  • 3 Tbsp green curry paste, or according to taste
  • 1 Tbsp fresh coriander, chopped plus extra for garnishing
  • 1 Tbsp  lime juice
  • 2 – 3 tsp olive oil
  • 150g Bok Choy, chopped (if available, if not substitute with de-stemmed baby spinach leaves)
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over a medium high heat and sauté the mushrooms, peppers, onion and garlic until tender.
  2. Add in the chickpeas and curry paste and cook +/- 2 minutes until everything is mixed thoroughly.
  3. Add in the coconut milk and vegetable stock and bring to a boil.
  4. Boil for +/- 5 minutes while stirring.
  5. Add the bok choy and continue to boil for another minute.
  6. Remove from heat and add in the coriander, lime juice and season to taste.
  7. If you are using baby spinach instead of bok choy, add it now and stir through until wilted.
  8. Garnish your coconut and veg soup with coriander and enjoy!
