Zuchini, courgettes or baby marrow. It goes by many names, but this versatile vegetable makes a tasty coleslaw. This is a great healthy salad courtesy of MrsBalls.com that is so easy to make.
Serves 2
Ingredients:
- 3 cups zucchini (courgettes), shredded or grated
- 1 tsp salt
- 2 cups carrot, coarsely grated
- 1 cup red pepper, julienne sliced
- ½ cup red onion, thinly sliced in half rounds*
- ¼ cup celery, julienne** sliced
- 2 tsp fresh parsley, chopped
- 1 tsp fresh coriander or dill, chopped
Dressing ingredients:
- ¾ cup Mrs Ball’s Lite Chutney
- 1½ Tbs Dijon mustard
- 4 Tbs red wine vinegar
- 1 Tbs olive oil
- 3 Tbs tangy Mayonnaise or Greek yoghurt
- Salt and freshly ground black pepper
Directions:
- For the salad: Combine zucchini and salt. Toss well and transfer to a colander. Allow to stand for 30 minutes.
- Rinse under cold water, drain and squeeze out any excess moisture.
- Mix zucchini in bowl with carrots, red pepper, onion and celery. Toss well.
- Sprinkle with parsley and coriander.
- For the dressing: Combine all the ingredients together and mix well. Season with salt and pepper to taste. Pour dressing over vegetables and mix well.
- Cover and refrigerate for up to 5 hours
- Serve chilled.
Get creative: To boost the crunchiness of this delicious healthy salad, add some extra shredded cabbage and be careful not to drench the salad in too much dressing!
*Onion slicing. I pop the onion into the freezer for 10 to 15 minutes before cutting or rub some lemon juice on the knife, making sure to re-coat the blade every few cuts.
** Julienne or French Cut is cutting into long thin strips.
