Zucchini Coleslaw Recipe

Zuchini, courgettes or baby marrow. It goes by many names, but this versatile vegetable makes a tasty coleslaw. This is a great healthy salad courtesy of MrsBalls.com that is so easy to make.

Serves 2

Ingredients:

  • 3 cups zucchini (courgettes), shredded or grated
  • 1 tsp salt
  • 2 cups carrot, coarsely grated
  • 1 cup red pepper, julienne sliced
  • ½ cup red onion, thinly sliced in half rounds*
  • ¼ cup celery, julienne** sliced
  • 2 tsp fresh parsley, chopped
  • 1 tsp fresh coriander or dill, chopped

Dressing ingredients:

  • ¾ cup Mrs Ball’s Lite Chutney
  • 1½ Tbs Dijon mustard
  • 4 Tbs red wine vinegar
  • 1 Tbs olive oil
  • 3 Tbs tangy Mayonnaise or Greek yoghurt
  • Salt and freshly ground black pepper

Directions:

  1. For the salad: Combine zucchini and salt. Toss well and transfer to a colander. Allow to stand for 30 minutes.
  2. Rinse under cold water, drain and squeeze out any excess moisture.
  3. Mix zucchini in bowl with carrots, red pepper, onion and celery. Toss well.
  4. Sprinkle with parsley and coriander.
  5. For the dressing: Combine all the ingredients together and mix well. Season with salt and pepper to taste. Pour dressing over vegetables and mix well.
  6. Cover and refrigerate for up to 5 hours
  7. Serve chilled.

Get creative: To boost the crunchiness of this delicious healthy salad, add some extra shredded cabbage and be careful not to drench the salad in too much dressing!

*Onion slicing. I pop the onion into the freezer for 10 to 15 minutes before cutting or rub some lemon juice on the knife, making sure to re-coat the blade every few cuts.

** Julienne or French Cut is cutting into long thin strips.
