Apple and Nut Stuffing Recipe

A scrumptious stuffing that doesn’t use bread. This apple and nut stuffing has a fresh taste and is the perfect compliment for a roast bird.

Makes enough stuffing for 1 turkey 

Ingredients:

  • 3 cups of oatmeal
  • 1½ tablespoons olive oil
  • 1½ cups chopped red onion
  • 2 crisp red apples, diced
  • ¼ cup finely chopped fresh parsley
  • Fresh rosemary leaves, thinly sliced sage, and/or fresh thyme, to taste
  • ½ cup finely chopped cashew nuts
  • ½ cups vegetable stock
  • Salt and freshly ground pepper to taste

Instructions:

  1. Heat the oil in a frying pan. Add the red onion and sauté over medium heat until golden. Add the apple and sauté for 5 minutes longer or until slightly softened.
  2. Add oatmeal and fresh herbs. Stir until well mixed.
  3. Drizzle in the broth slowly, stirring at the same time to moisten the ingredients evenly until they are clumpy and easily packed. It should be moist but not watery.
  4. Season with salt and pepper.
