A scrumptious stuffing that doesn’t use bread. This apple and nut stuffing has a fresh taste and is the perfect compliment for a roast bird.
Makes enough stuffing for 1 turkey
Ingredients:
- 3 cups of oatmeal
- 1½ tablespoons olive oil
- 1½ cups chopped red onion
- 2 crisp red apples, diced
- ¼ cup finely chopped fresh parsley
- Fresh rosemary leaves, thinly sliced sage, and/or fresh thyme, to taste
- ½ cup finely chopped cashew nuts
- ½ cups vegetable stock
- Salt and freshly ground pepper to taste
Instructions:
- Heat the oil in a frying pan. Add the red onion and sauté over medium heat until golden. Add the apple and sauté for 5 minutes longer or until slightly softened.
- Add oatmeal and fresh herbs. Stir until well mixed.
- Drizzle in the broth slowly, stirring at the same time to moisten the ingredients evenly until they are clumpy and easily packed. It should be moist but not watery.
- Season with salt and pepper.
