Easy Italian Chicken and Spinach

This is a fantastic healthy Italian chicken recipe that only takes 15 minutes to prepare. The herbs give the chicken a continental flavour and the added spinach gives you a boost of healthy nutrients.

Serves 2

Ingredients:

  • 1 Tbsp extra virgin olive oil
  • 300 filleted chicken breasts, chopped into cubes
  • 1 onion
  • 3 cloves of chopped garlic
  • 1 tin of chopped tomatoes (I like the Italian herb flavoured ones for this recipe)
  • 300g fresh spinach (make sure to rinse before chopping)
  • Approximately 5g fresh basil, chopped
  • Approximately 5g oregano, chopped
  • ½ cup of grated mozzarella cheese

Instructions:

  1. Heat olive oil in a large pan over medium-high heat.
  2. Once hot, add chicken and cook for about 3 minutes to brown on all sides.
  3. Chop onions and garlic and add them to the pan and continue to cook for about 5 minutes more or until the onions are soft.
  4. Rinse spinach and roughly chop it. Make sure to remove the thick white stems.
  5. Add tinned tomatoes, spinach, basil, oregano, salt and heat through.
  6. Add mozzarella cheese and stir to combine. Cook for about 2 more minutes to melt cheese.
  7. Take it off the heat and serve your Italian chicken immediately.
