This is a fantastic healthy Italian chicken recipe that only takes 15 minutes to prepare. The herbs give the chicken a continental flavour and the added spinach gives you a boost of healthy nutrients.
Serves 2
Ingredients:
- 1 Tbsp extra virgin olive oil
- 300 filleted chicken breasts, chopped into cubes
- 1 onion
- 3 cloves of chopped garlic
- 1 tin of chopped tomatoes (I like the Italian herb flavoured ones for this recipe)
- 300g fresh spinach (make sure to rinse before chopping)
- Approximately 5g fresh basil, chopped
- Approximately 5g oregano, chopped
- ½ cup of grated mozzarella cheese
Instructions:
- Heat olive oil in a large pan over medium-high heat.
- Once hot, add chicken and cook for about 3 minutes to brown on all sides.
- Chop onions and garlic and add them to the pan and continue to cook for about 5 minutes more or until the onions are soft.
- Rinse spinach and roughly chop it. Make sure to remove the thick white stems.
- Add tinned tomatoes, spinach, basil, oregano, salt and heat through.
- Add mozzarella cheese and stir to combine. Cook for about 2 more minutes to melt cheese.
- Take it off the heat and serve your Italian chicken immediately.
