Cottage Cheese Caprese Crudite

I love hosting dinner parties and when I do I like to have some finger foods for my guests before the main event. This is a quick and easy snack food that is a healthy take on a traditional Caprese salad. All you need is some cottage cheese, basil, tomatoes and an extra veggie or two.

Serves 4

Ingredients:

  • 1 tub low fat Cottage cheese
  • 4 or 5 large Carrots
  • 1 cucumber
  • Fresh basil leaves
  • Rosa tomatoes

Instructions:

  1. Using your raw carrots and cucumber cut them in half, lengthways, and into bite sized portions of approximately 5 cm long.
  2. Create a channel down the center of your cucumber or carrot that will be deep and wide enough to to layer your cheese and tomatoes in. In order to core the carrots it will be much easier if you boil, them for 10 mins so that they soften and allow them to cool before creating the channels. If you prefer to keep your veg raw and crispy you can use an apple corer to help you.
  3. Layer the basil leaves into the channels in your veg.
  4. Slice the rosa tomatoes and place them on top of the basil
  5. Spoon out the cottage cheese on top of the tomatoes and drizzle with your favourite balsamic reduction or salad dressing.
  6. Serve
