Grilled sardines are often found in Portuguese cooking and are a popular favourite. This recipe adds a touch of freshness by bringing lemon and fennel into the mix. Then just serve this with your favourite salad.
Serves 2
Ingredients:
- 2 Tbsp olive oil
- 6 whole sardines
- 1 tsp smoked paprika
- 2 lemons
- 4 radishes
- 1 head fennel, trimmed
- A few sprigs of watercress
Instructions:
- Preheat your oven to 200°C.
- Slash both sides of each sardine, with a sharp knife. Brush with the rest of the oil, rub them with the paprika and place onto foil that has been laid out on a baking tray.
- Squeeze over 2 Tbsp juice from 1 of the lemons. Roast the fish for 10-12 mins.
- In the meantime finely slice the fennel and radishes and add the juice from your second lemon. Mix them together in a bowl.
- Put the fish on serving plates. Spoon over the cooking juices and your radish and fennel mix and serve your grilled sardines along with a salad.
