Green beans are healthy and tasty and are the main ingredient in Fasolakia. This is one of the simplest and tastiest meals you can make. It can be served as a one pot wonder or added to the table as part of a more elaborate spread. In Greece, fasolakia is often eaten as a light main dish and served with feta cheese and crusty bread.
Ingredients:
- ¼ red onion finely sliced in half moons
- ¼ tsp crushed garlic
- 1/8 cup olive oil
- 175g green beans (topped and tailed)
- ½ cup chopped tinned tomatoes
- 4 baby potatoes cut in half
- 1 round of feta (optional)
Instructions:
- Gently sauté the onion in a splash of oil until softened.
- Add the balance of the oil, tomatoes and garlic and stir together.
- Add the beans and potatoes and toss together until well coated.
- Cover and allow to simmer for about 35 minutes until the beans have softened and the sauce has been reduced.
- Sprinkle the feta over the top if using and serve warm or at room temperature.
