Fasolakia

Green beans are healthy and tasty and are the main ingredient in Fasolakia. This is one of the simplest and tastiest meals you can make. It can be served as a one pot wonder or added to the table as part of a more elaborate spread. In Greece, fasolakia is often eaten as a light main dish and served with feta cheese and crusty bread.

Ingredients:

  • ¼ red onion finely sliced in half moons
  • ¼ tsp crushed garlic
  • 1/8 cup olive oil
  • 175g green beans (topped and tailed)
  • ½ cup chopped tinned tomatoes
  • 4 baby potatoes cut in half
  • 1 round of feta (optional)

Instructions:

  1. Gently sauté the onion in a splash of oil until softened.
  2. Add the balance of the oil, tomatoes and garlic and stir together.
  3. Add the beans and potatoes and toss together until well coated.
  4. Cover and allow to simmer for about 35 minutes until the beans have softened and the sauce has been reduced.
  5. Sprinkle the feta over the top if using and serve warm or at room temperature.
