Hummus Coated Chicken

If you’re craving some juicy baked chicken, you need to try this recipe for baked hummus coated chicken. Lean chicken breast is kept moist in a creamy hummus shell, which adds flavor, fiber and protein. This is a fast and delicious weeknight meal.

Hummus is one of my all time favourite spreads, and in this recipe I use it to give this dish it’s delicious flavour.

Ingredients:

  • 4 chicken breasts flattened
  • 1 tub Hummus
  • 1 large leek sliced
  • Half punnet mushrooms roughly chopped
  • 6 rosa tomatoes halved
  • 5 baby marrows, sliced horizontally
  • 1 lemon
  • Black pepper
  • Salt
  • Paprika
  • ¼ cup white wine

Instructions:

  1. Preheat oven to 200 degrees.
  2. Liberally cover the chicken breasts with salt and pepper and then coat with hummus.
  3. In the bottom of your dish, place all the vegetables.
  4. Place the coated chicken on top of the vegetables.
  5. Squeeze the juice of the lemon over the chicken and vegetables.
  6. Slice the lemon and place between the chicken pieces
  7. Pour over the white wine and sprinkle paprika over the chicken.
  8. Cover with lid and bake in the oven for 20 – 30 minutes or until the chicken is cooked.
  9. Serve with brown rice and a fresh green salad.
