Who says that cooking nutritious and delicious food has to be difficult. This Swiss Chard Stuffed Avocados recipe is just too easy. Avo is an incredibly popular superfood among health conscious individuals, and then by adding the protein packed swiss chard into the mix you have an easy but nutrient packed accompaniment to any meal.

Ingredients:
- 4 cups chopped Swiss Chard (hard white pieces removed)
- 2 Tbsp olive oil
- Juice of 2 lemons
- 1 avocado
- salt and pepper
Instructions:
- Sauté the Swiss chard with the olive oil and lemon juice until just wilted.
- Season with salt and pepper.
- Peel and cut the avocado into quarters.
- Spoon the Swiss chard into the cavity of the avocado and serve immediately.
