Grilled Salmon with Horseradish drizzle

This grilled salmon recipe is so easy to make. The dill gives the fish a lovely fresh flavour while the horseradish adds a touch of spice. Pair this with your favourite salad from All Sorts of Salads and a crisp Chenin Blanc and you have a perfect quick, easy and above all, healthy meal.

This recipe feeds four so invite some friends round to share and enjoy this scrumptious meal.

Serves 4

Ingredients:

  • 4 boneless 3-5 cm thick salmon portions
  • 6 Tbsp chopped fresh dill
  • 3 Tbsp horseradish
  • 2 Tbsp white wine vinegar
  • 4 Tbsp olive oil plus extra for grilling
  • Coarse black pepper for garnish
  • A pinch of salt

Instructions:

  1. Season salmon steaks with salt.
  2. To make the vinaigrette, in a bowl, combine the dill, horseradish, vinegar and olive oil with 1 Tbsp water and a pinch of salt and pepper
  3. Use a bit of extra olive oil to oil the grill grates.
  4. Grill the fish, turning once, until medium-rare, (about 8 to 10 minutes)
  5. Whisk vinaigrette thoroughly and drizzle over salmon
  6. Serve and enjoy
