Salami salad is so yummy and the powerful flavour of this popular cured meat makes it perfect for incorporating into a simple salad. This salami salad recipe is quick and easy to make.
Ingredients:
- ½ cup salami, sliced
- ½ cup chickpeas
- 2 carrots, sliced in rounds
- ½ cup Rosa tomatoes, halved
- ¼ cucumber, sliced in rounds
- 2 cups Swiss chard, chopped
- 2 boiled eggs, quartered
- ¼ red onion, sliced
- Fresh parsley for garnish
Dressing:
- 1 tsp Dijon mustard
- ¼ cup olive oil
- 2 Tbsp white wine vinegar
Instructions:
- Mix all the salad ingredients together, except the eggs and parsley.
- Once the salad is mixed, cut the eggs into quarters and place around the salad.
- Garnish with fresh parsley.
- Blitz together the salad dressing ingredients and pour over the entire salad.
