Banana nut bread is always popular and it’s a great option when you’ve got bananas that are becoming too ripe. This recipe uses Greek yogurt to make the bread delicious and moist.
Add in your favourite type of nut and you have a healthy banana nut bread ready to go. This bread is just so comforting. It is a wonderful baked treat to have around, is low on calories and it keeps well too. This can also be done without the the nutmeg or the nuts, which worked well for me when entertaining a guest with a nut allergy.
Makes 1 – 2 loaves depending of the size of your loaf tin/s
Ingredients
- 125g brown sugar
- 2 Tbsp unsalted butter
- 2 large eggs, room temperature
- 450g very ripe bananas, mashed +/-3 large bananas
- 200g Greek yogurt
- 1 tsp vanilla essence
- 300g flour
- 2 tsp bicarbonate of soda
- 1 tsp cinnamon
- A pinch of salt
- Cloves and nutmeg to taste
- 40g chopped nuts (walnuts, pecan or macadamia work best)
Instructions
- Place a rack in the centre of the oven and preheat to 160°C.
- Cut the butter into small chunks and place in a large mixing bowl along with the brown sugar. Use an electric mixer to beat together the butter and sugar for a few minutes. Make sure the butter and sugar are fully mixed and that they form small, even-sized crumbs.
- Add the eggs to the bowl and continue to mix till smooth.
- In a small bowl, mash the bananas with a fork till smooth. Add the mashed bananas, Greek yogurt, and vanilla to the bowl. Use a spatula to stir the mixture till smooth.
- In a medium bowl, sift the flour, baking soda, salt, cloves and nutmeg together.
- Fold the dry ingredients into the wet mix to make a thick batter.
- Fold in the chopped nuts.
- Grease two loaf pans with nonstick cooking oil spray. Divide the batter evenly between the two pans (or one larger loaf tin depending on what you have).
- Bake the banana bread for 45-55 minutes, or until the top is golden brown and a toothpick inserted into the center of the loaf comes out clean.
- Let the loaves cool for 10 minutes in their pans, then put them on a wire rack to cool completely.
