Lemony Potato and Horseradish Salad

Lemony potato salad is of my favourite salads. It can be served warm or cold and it goes beautifully with just about anything.

Chopped parsley keeps it fresh while the horseradish gives it a little something extra. Give this a try for your next picnic, braai or just because. You can find even more scrumptious recipes like this in my book All Sorts of Salads.

Serves 8

Ingredients:

  • 8 large potatoes
  • 3 lemons (halved)
  • 1 sprig of fresh parsley
  • 1 red onion
  • 100g butter
  • 100g creamed horseradish
  • Salt and pepper for seasoning

Instructions:

  1. Bring a large pot of salted water to a boil.
  2. Cut the potatoes into cubes and add them to the pot.
  3. Cook the potatoes until tender but still firm( about 15 minutes).
  4. Drain and cool.
  5. Slice lemons in half and set to one side.
  6. Slice red onion and chop parsley and set to one side.
  7. Grease the oven tray and place potatoes and red onion into the tray. Mix thoroughly so that the onion is evenly distributed.
  8. Juice the lemons and pour the juice over the potatoes in the tray. Make sure that the potatoes have a good coating of lemon so that they can absorb the flavor.
  9. Place the tray in the oven and grill for 10 – 12 minutes or until the potatoes are lightly browned.
  10. Remove from oven and allow to cool (or if you prefer to have this as a warm side, serve immediately)
  11. Empty the potato mix into a large bowl and add horseradish,
  12. Lightly toss your lemony potato salad, add salt and pepper to taste and serve.
