Sunburst cocktails

I recently came back from a sailing trip around the Greek Islands. There is so much to enjoy on the islands, the perfect Greek meze, the turquoise waters, the Greek hospitality… I can continue to wax lyrical indefinitely! But one of the highlights was discovering Sunburst cocktails.

On this trip, our hostess came up with simply the most thirst quenching, moreish cocktail, that was perfect for the hot weather. She called it a Sunburst, which I think is the perfect name for it. We loved them so much that when we ran out of Campari and I cheekily bought what was left at a beach bar on the small island of Koufonissi!

The taste of Campari is bittersweet, bitter like orange rind and sweet like cherries, with a herbal finish. You’ll recognize it by its bright red colour. In this mix, it’s pure sunshine!

This is going to be my go-to drink for the summer.

Serves 1

  • 2 tots Campari
  • 2 parts orange juice
  • 1 part soda water (for a more alcoholic version, substitute with dry Prosecco)

Place some ice cubes into a tall glass. Add the Campari, then the orange juice and finally the soda water or Prosecco. Serve with an orange slice and a colourful straw.
