Mexican style chicken fajitas are fun to make, fresh and healthy, as well as great to eat. If you’re not already familiar with fajitas, in Mexican cooking they are basically any grilled meat that is served as a taco on a tortilla.
This recipe is very easy to make but it does require some marinating time to make sure that your chicken is bursting with flavour. If you’re in a rush you can just leave the chicken to marinade for 20 minutes – just to give enough time for the flavour to absorb into the meat. Then the rest as as easy as one, two, three! Perfect for midweek munching or when you feel like some authentic Mexican style chicken fajitas at home.
Makes 4-6 fajitas
Ingredients:
- 500g chicken breasts or thighs, deboned and sliced into thin strips
- 3 peppers, sliced (I like to use a mix of red, yellow and green peppers to give the dish a burst of colour)
- 1 red onion, sliced
- 1 lime, juiced
- 2 Tbsp olive oil
- 1 tsp cumin
- ¼ tsp black pepper
- Fresh chillies – to taste
- A handful of grated cheese to garnish
- Tortillas
Instructions:
- To begin you will need to make the marinade. Mix the juice from a lime into a mixing bowl and add olive oil, chili powder, cumin and black pepper.
- Take the sliced chicken into the bowl with the marinade, and toss until thoroughly coated.
- Allow the chicken to rest in the marinade for between 20 minutes – 1 hour. If you don’t have the time, just skip marinating and use the mixture as a sauce.
- In the meantime, slice the peppers, chillies, and onions and set to one side.
- In a large pan drizzle some olive oil and heat over medium-high heat. Add the chicken fajitas mixture to the frying pan and cook, stirring every 30 seconds, for 7 minutes, or until the chicken is fully cooked.
- Spoon the chicken filling down the center of the tortillas and add in the peppers and onion.
- Garnish with chillies and cheese to taste and serve with your preferred toppings – such as sour cream or guacamole (see my recipe for perfect guacamole here).
