It’s not very often that you come across a dessert that’s both gorgeous and healthy, but this showstopper pecan and berry yogurt tart is exactly that. Visually stunning, easy to make and made with zero processed sugar, this beautiful and brilliant dessert is everything you’ve been looking for. It’s a great opportunity to be creative with your decorating skills and it’s as fun to make as it is to eat.
Serves 6 – 8
Ingredients:
- 200g pecan nuts
- 10 – 12 sweet dates, soaked in warm water for 10 minutes
- 500ml plain Greek or Bulgarian yogurt. The thicker the better.
- 2-3 tsp honey
- ¼ teaspoon table salt
- 350g mixed berries
- 60g melted butter
Instructions:
- Preheat oven to 175°C
- If your dates are not already pitted, remove the pips then soak them in warm water for 10 minutes.
- In a food processor, grind most of the pecan nuts until they are ground into a semi-fine powder. Keep a few pieces aside for the decorative topping.
- Add the dates and pulse until the mixture holds together when pinched and starts to look like dough.
- Mix in the melted butter.
- Press the dough into a medium sized tart pan with a removable bottom to form an even crust along the base and sides.
- Chill the crust in the freezer for 30 minutes.
- Once the crust is chilled, remove it from the freezer.
- Bake the crust in the oven for 10 – 15 minutes or until it is lightly browned. Keep an eye on it as it is very easy to burn a nut crust.
- Carefully remove the tart from the pan and slide it onto your serving platter. Keep the tart resting on the bottom disc to maintain the integrity of the pie crust.
- Fill the crust with the yogurt.
- Top the yogurt off with the berries. This is your chance to be creative so have fun!
- Drizzle some honey over the top.
- Slice the tart with a sharp knife and be sure to wipe off the blade after each cut, use a spatula to lift it off the base. If you have used thick enough yogurt your slices should hold, but if you’re feeling nervous or you slices start to flop simply grab a spoon and scoop!
- Serve and enjoy a delicious pecan and berry yogurt tart.
