This quick and easy dark chocolate pudding is made with low-fat ingredients and is always a firm crowd favourite. It has a rich chocolatey flavour minus all the extra unnecessary calories. It’s versatile too, so it can be enjoyed chilled or (for those of us who are more impatient for our chocolate fix) serve it as a delectable warm dessert.

Instructions:
- In a medium-sized saucepan mix the dry ingredients together.
- Thoroughly combine the cornstarch, sugar, and cocoa before adding milk to avoid lumps.
- Gradually add in the milk and stir until smooth.
- Heat up the mixture over a medium heat, stirring constantly until it comes to the boil.
- Then lower the heat and gently simmer, while still stirring continuously, for 3 to 4 minutes.
- Stir the vanilla and chopped up dark chocolate into the mix.
- Continue stirring until the chocolate melts and is thoroughly combined.
- Pour into individual pudding bowls and allow to cool.
- If you prefer it warm, put it to one side and allow it to set for 20 minutes. If you prefer a colder version, leave it in the fridge for about an hour until completely chilled.
- Serve with fresh berries or just as it is – yum!
