Boere Beskuit

There’s nothing that reminds me more of my childhood than boere beskuit. Many of my early holidays were spent with my grandparents in Cape Town. There was nothing I loved more than waking up and having tea and rusks for breakfast before excitedly heading off to the beach…. Even Father Christmas had to have some of them when he came to deliver the presents on Christmas Eve! So I hope you enjoy them as much as I do!

Ingredients

  • 600g self raising flour
  • 1 ¼ cups buttermilk
  • 125g butter
  • ½ cup sugar
  • pinch of salt

Instructions:

  • Preheat oven to 190 degrees.
  • Add about half of the flour to a bowl.
  • Add the sugar, a pinch of salt and mix together.
  • Cut the butter into cubes and mix in with the flour mixture. Using your fingers, mix until well combined.
  • Add the buttermilk and mix together with a knife.
  • Add the balance of the flour and working with your hands, knead together for about 2 minutes.
  • Roll into large balls and place close together in a pre greased high baking dish.
  • Bake in the oven for between 30 and 35 minutes or until cooked and golden.
  • Remove and once cool enough to handle, break the balls in half and put the pieces cut side up on baking trays.
  • Turn the oven down to 100 degrees and return baking trays to the oven and continue to cook for another 2 – 3 hours. Turn the oven off and leave to dry out for another 3 hours.
  • Remove and place in an airtight container.
