Sugar-free apple & cinnamon breakfast muffins

Avoid skipping breakfast or snacking on high-sugar breakfast bars and make a batch of these muffins instead. Breakfast is often a meal eaten on-the-go in busy households and can easily be overlooked, but with these sugar-free apple and cinnamon breakfast muffins you can now have a healthy breakfast even when you’re rushing out the door.

They have no added sugar and store really well so that you can prepare them in advance. Get creative and top them off with some nuts or seeds or incorporate some blueberries into the mix, they’re fairly versatile and tasty enough that you’ll never want to miss out on your healthy breakfast again. These muffins can be stored in an airtight container in the fridge for 3 days or you can freeze them and defrost when needed for up to 2 months. 

**I’ve actually made these before and forgotten to add egg and they turned out just fine! So great news if you can’t eat egg.

Makes: 12

Ingredients

  • 2 large apples / 3 smaller apples (grated,peeled)
  • 150g butter 
  • 2 bananas (medium sized and ripe – the riper they are, the better)
  • 100g raisins or sultanas
  • 180g self-raising flour (you can use whole grain flour if you prefer)
  • 2 eggs
  • 2 tsp cinnamon (plus some extra for sprinkling)
  • 2 tsp baking powder

Instructions:

  1. Preheat the oven to 180C and grease and line a muffin tray with paper cases. You may find that these muffins can stick to the paper cups, to avoid this lightly grease the inside of the paper cups and dust with some flour. This will help to prevent them sticking.
  2. Put the apple and butter in a saucepan and cook for 5 minutes until soft.
  3. Peel and mash bananas with the back of a fork.
  4. Mix the flour, baking powder, eggs, banana, apple mixture, raisins and 2 tsp cinnamon together in a bowl. 
  5. Spoon the mixture into the paper cases and sprinkle some cinnamon over the top of each muffin.
  6. Bake for 25 – 30 minutes. 
  7. Remove from heat and allow to cool before serving.
  8. Enjoy your sugar-free apple and cinnamon muffins for longer by storing them in the fridge in an airtight container.
