Usually when we think of pancakes, we imagine a huge sweet stack of pancakes, oozing with syrup or sprinkled with cinnamon and sugar, but pancakes don’t always have to be such a no-no for a healthy diet. These savoury smoked salmon trout pancakes combine the flipping fantastic fun of making pancakes and turn them into something better for adult tastes and tummies.
Minify them and you’ve got a gourmet snack platter for your guests, or whip them up easily on a weekend for a well-fed family. Versatile, fun and a little bit different, these savoury pancakes are an impressive addition to add to your cooking repertoire.
Serves 4:
Ingredients:
- 1 cup self-raising flour, sifted
- 3/4 tsp baking powder
- 1/2 tsp caster sugar
- 1 egg, beaten
- salt and pepper to taste
- 1 Tbsp fresh chopped parsley
- 1 cup milk
- 100g smoked salmon trout, shredded
- 25g mascarpone cheese
- 100g cream cheese
- 1 clove of garlic finely diced
- 1 Tbsp fresh dill, chopped
- 1 Tbsp lemon juice
- Olive oil, for cooking
- Fresh rocket leaves and chopped tomato, to garnish
Instructions:
- Mix the flour, baking powder and sugar together in a large mixing bowl.
- Make a well in the centre and add the egg, salt and pepper, fresh parsley and half the milk.
- Whisk the mix until well blended, gradually adding the remaining milk to get a creamy consistency. You can add more or less milk depending on the consistency and what you prefer – a runnier mix will give you thinner pancakes and thicker for thicker pancakes.
- Drizzle a large pan with olive oil and heat on a medium to high heat – don’t let the oil burn.
- Drop a large spoonful of the batter into the pan and cook for about 3 minutes until the bottom is browned, the edges look solid and bubbles are coming up through the center of the pancake.
- Flip over and cook for another 2 minutes or so, then set aside to cool. (A spatula is safest, but it’s far more fun to flip it up into the air with a flick of the wrist!)
- Repeat with the remaining mixture.
- Place the cheeses, dill, lemon juice, garlic and salt and pepper in a bowl. Mix until thoroughly combined.
- Spread the cheese mixture over the pancakes and top with smoked salmon trout.
- Garnish your smoked salmon trout pancakes with chopped tomatoes and rocket leaves and serve.
