Sticking to a paleo diet isn’t always easy, especially when the cold weather begins to set in and you start to crave that warming comfort food. With this easy to make 30 minute paleo friendly almond crusted chicken, you don’t have to miss out. This is a paleo friendly meal that I whipped up with some step-by-step instructions. Almond crusted chicken that’s as easy to make as it is delicious to eat.
Serves 4
Ingredients:
- +/- 500g (4) filleted chicken breasts
- 200g button mushrooms
- 300g green beans
- 1 large red onion
- 2 cloves of fresh garlic
- 250g crushed almonds
- 2 large eggs
- 4 sprigs of rosemary
- 1 Tbsp butter
- Salt and pepper to taste
- Fresh lime to garnish
- Cooking oil
- Paper towel
Instructions:

1.Prepare your ingredients and set aside separately. Butterfly and season the chicken breasts, slice button mushrooms and onions. Top and tail the green beans, and crush and chop the garlic and rosemary.
2.In one dish beat the eggs, while in another dish spread out the crushed almonds and chopped rosemary.
3.Coat each chicken breast in a layer of egg and then a layer of almonds until the chicken is nicely coated and set aside on a plate.

4.In a large pan melt a tablespoon of butter and add the garlic; at the same time use another stove burner to bring the green beans to the boil.
5.Once the garlic has begun to cook you can add the button mushrooms.

6.Allow the mushrooms to cook down for a bit and then push to one side of the pan.
7.On the other side of the pan add the red onion in to start cooking.

8.Once the mushrooms, onion and beans are cooked remove from heat and set to one side.
9.In a pan, heat up some cooking oil to a medium high temperature.
10.Once the oil is up to temperature add in the almond chicken and allow to brown thoroughly before turning.

11.Try to only turn the chicken once for each side so that the almond crumb doesn’t come off.
12.Place two sheets of paper towel down on a surface and once the chicken is cooked through, remove from the pan and place on the paper towel to absorb excess oil.

13.Return the pan with the mushrooms and onions to the heat and add the green beans.
14.Toss until they are nicely warmed.
15.Serve your almond crusted chicken and veg with some fresh lime wedges and enjoy!
