Hummus is so versatile. We all know it’s the perfect accompaniment to crudites but it works equally well as a crust for fish and chicken. It’s also incredibly easy to make and by making it yourself you’re guaranteed there are no hidden preservatives, making it extra healthy.
Ingredients:
- 1/2 tin 410g chickpeas
- 1/8 cup liquid from can of chickpeas
- 3T lemon juice
- 1T tahini
- 1 clove garlic
- ½ tsp salt
- 2T olive oil
- ½ tsp cumin
Instructions:
- Place the chickpeas in the processor and blend until smooth.
- Add the balance of the ingredients and blend again until smooth.
- Store in the fridge.
You can serve this tasty hummus with toasted pita bread or some julienne carrots and cucumber.
