Red peppers are such a versatile vegetable. This red pepper thyme dip recipe makes use of these tasty peppers together with feta cheese and thyme to give it some extra flavour. Perfect for dipping.
Serves 4-6
Ingredients:
- 3 large red peppers
- 60ml olive oil
- 6-8 cloves of roasted garlic, roughly chopped
- 85g feta cheese, broken into large crumbles
- 2-3 sprigs of fresh thyme, plus more for garnishing
- Salt
- Black pepper
Instructions:
- Chop your red peppers into large pieces. Scrape out and discard the seeds.
- Heat oven grill and place the peppers on a foil-lined baking sheet.
- Grill until peppers are charred. Turn them occasionally so as to char on all sides.
- Transfer the peppers to a bowl and allow to cool.
- Put the roasted peppers, olive oil, garlic and thyme sprigs into olive oil and allow to marinate for 15 to 20 minutes.
- Remove roasted red pepper from the oil allowing most of the oil to drip off and add to blender with garlic and blend.
- Transfer your red pepper blend to your serving bowl and season with salt and pepper to taste.
- Crumble feta cheese over the top and serve.
