Gyros might not seem like the quickest thing to make but this recipe is speedy, easy and oh so yummy. The lime and garlic give the chicken a boost of flavour while the feta cheese adds a scrumptious saltiness to this dish.
When you are in a rush mid-week or you need a quick-fix lunch for work, these chicken lime gyros with feta cheese will sort you out nicely. Simple to make and tasty to eat, you only need 30 minutes to make this delicious meal.

Ingredients
- 350g diced chicken breast (if you have leftover chicken from a previous meal you can rejuvenate it by incorporating it into this recipe)
- 2-4 leaves of lettuce, chopped
- 2 tomatoes, chopped
- ½ an onion, thinly sliced
- ½ a cucumber, thinly sliced
- 2 cloves of garlic, crushed
- 1 tsp cumin powder
- 2 fresh limes, juiced
- 100g crumbled feta cheese
- 4 pita breads
Instructions:
- First you will need to make the chicken marinade. Combine the lime, cumin powder and crushed garlic into a bowl and mix well.
- Take the diced chicken cubes and add them into the lime marinade and make sure each piece is thoroughly coated. You will need to leave the chicken to soak up the flavour of the marinade while you chop, slice and prep your veggies.
- Once you have prepared the lettuce, tomato, onion and cucumber you will need to pan fry the chicken until it is cooked through. For extra flavour you can keep some of the lime marinade to pour over the chicken while it cooks in the pan.
- When your chicken is prepared, warm up the pita bread either using a toaster, oven, microwave or a heated skillet.
- Lay pita bread flat and layer chicken, lettuce, tomato, cucumber and any additional toppings you might like to add. Then add a generous amount of feta cheese to each.
- Cut the pita bread into quarters and enjoy your quick and easy chicken lime gyros.
