You know the feeling when your body wants something sweet, but you just want none of the guilt? I have those moments all the time, and a banana blondie is a great way to satisfy the craving.
For those who aren’t familiar with blondies, they are chocolate-free brownies. Unlike a regular brownie or even a white chocolate brownie, blondies don’t contain any chocolate or chocolate flavouring. (That said, people do sometimes add chocolate chips and there’s nothing to stop you doing so too if you want.)
These healthy banana blondies only need four ingredients and you don’t even need to bake them. Quick, easy and delicious, they are perfect for a quick snack, healthy dessert or for when you need a guilt-free treat. They tick all of the diet boxes too – suitable for paleo and vegan diets and they’re gluten free. Bon Appetit!
Makes 10 – 12 blondies
Ingredients:
- 140g sifted coconut flour
- +/- 200g mashed banana (two medium sized bananas are perfect, your bananas should be soft but not over ripe.)
- 140g peanut butter (you can use any other kind of nut butter if you prefer but peanut butter works a treat.)
- 250g maple syrup (you can use honey if you prefer, but this will give your banana blondies a slightly different taste and will also mean they are no longer vegan)
Instructions:
- In a mixing bowl, combine the coconut flour and banana and mix well. The result should be a crumbly mix.
- In a bowl melt the peanut butter and maple syrup together.
- Remove from heat and gradually add in your banana and coconut flour mixture.
- Stir in a figure of 8 motion until a smooth thick batter is formed.
- Transfer batter to a lined container or small baking tray and refrigerate for 10 to 20 minutes, until firm.
- Cut into squares and eat immediately or store your healthy banana blondies in the fridge for later.
