Peaches and cream chia seed pudding

This peaches and cream chia seed pudding is absolutely delicious and you can eat it for breakfast too! Chia seeds are amazingly good for you. Since chia seeds are a fantastic source of cholesterol-free protein, you can load up on pudding at the beginning of the day and know you’re still getting almost 10% of your recommended daily protein intake.

Incorporating chia seeds into your diet is also an easy way to help make sure you’re maintaining your digestive health – leaving you feeling good all day long. Super easy to make and delicious, this peaches and cream chia seed pudding is a great healthy and sweet breakfast alternative, filled with protein and fruit. 

Serves: 2 

Ingredients:

  • 6 ripe peaches, peeled, pitted and diced
  • 85g plus 2 tsp honey 
  • ¼ cup water
  • 1 tsp cinnamon
  • ½ cup low-fat milk (if you are dairy free, then use almond or soy milk instead)
  • 20g chia seeds 
  • ½ tsp vanilla essence 

Instructions:

  1. First make the peach compote. Add the diced peaches, 85g honey, ¼ cup water and cinnamon to a pot and bring to a boil. 
  2. Once boiling, reduce to a medium-low heat  and simmer for 15-20 minutes, stirring occasionally until mixture is thick and has a jammy consistency.
  3. Remove from heat and allow to cool.
  4. While the compote cools, combine the milk, chia seeds, remaining 2 teaspoons of honey, and vanilla essence in a bowl and stir with a whisk.
  5. Pour the chia seed mixture into serving bowls and place into the fridge.
  6. Store in the fridge for at least two hours, although it’s best to let the pudding sit in the fridge overnight.
  7. When ready to eat, layer pudding with peach compote and serve.
  8. Enjoy your delicious peaches and cream chia seed pudding.
