Ingredients:
- 6 ripe peaches, peeled, pitted and diced
- 85g plus 2 tsp honey
- ¼ cup water
- 1 tsp cinnamon
- ½ cup low-fat milk (if you are dairy free, then use almond or soy milk instead)
- 20g chia seeds
- ½ tsp vanilla essence
Instructions:
- First make the peach compote. Add the diced peaches, 85g honey, ¼ cup water and cinnamon to a pot and bring to a boil.
- Once boiling, reduce to a medium-low heat and simmer for 15-20 minutes, stirring occasionally until mixture is thick and has a jammy consistency.
- Remove from heat and allow to cool.
- While the compote cools, combine the milk, chia seeds, remaining 2 teaspoons of honey, and vanilla essence in a bowl and stir with a whisk.
- Pour the chia seed mixture into serving bowls and place into the fridge.
- Store in the fridge for at least two hours, although it’s best to let the pudding sit in the fridge overnight.
- When ready to eat, layer pudding with peach compote and serve.
